Color is not a quality criterion in olive oil. Early harvest starts with dark green and as the harvest progresses, yellow oil is obtained from ripe olives.

The color of good olive oil depends on the time of harvest. When olives are picked when they are green, they are dark and greenish in color, while as they ripen, they become light and yellowish in color. Quality olive oil should have a grassy and fruity scent. Its aroma is preserved by reducing its contact with air. Good olive oil should taste fruity and fresh. It should leave a slight burning taste in the mouth. Fresh and cold-pressed olive oil contains more phenols and is preferred for its bitterness. Olive oil stored in the refrigerator may freeze, but this does not affect the quality.
